
Significance
Jou Gwran is a distilled Bodo rice liquor — the strongest of the community’s rice beverages, with an alcohol content of about 16.11% — producing a transparent liquid with the highest reducing-sugar and protein content. It is used in marriage, worship and all social occasions.
History & Cultural Context
Jou is integral to the socio-cultural life of the Bodos, who have an age-old tradition of distilling Jou Gwran from fermented cooked rice (jumai) with the locally prepared yeast cake Amao. As with Jou Gishi, the groom’s side gifts a pair of Jou Gwran bottles to the bride’s family before marriage and again at Athimangla.
Process & Techniques
Amao cake is crushed onto cooked rice and fermented 3–4 days to form “jumai”; the jumai is preserved 3–5 days, diluted with water into “Afri” and kept 2–3 hours. Distillation is carried out in traditional pots stacked in three layers over 2–4 hours, repeated two to four times — the more it is distilled, the lower the concentration; the residue is called “Afri Katla”.
Traditional Knowledge
Jou Gwran has the highest alcohol content among locally prepared tribal beers, along with the highest reducing sugar, protein, ascorbic acid and glucose content. The medicinal plants used keep the body healthy and relaxed when taken in appropriate quantity, and the beverage contributes to livelihood and income generation.
