
Significance
Narzi is a semi-fermented/dried food product made from jute leaves โ a bitter, uniquely flavoured Bodo delicacy with noteworthy nutritional and medicinal value, and a rich source of Omega-3 fatty acids.
History & Cultural Context
Narzi curry is a famous Bodo cuisine prepared from Narzi with pork, meat or fish (and in vegetarian versions). It is an important food of the Bodo tribe throughout the year, and the raw product can be preserved for many years.
Process & Techniques
Method of production: jute leaves are dried in sunlight for six to seven days; the dried leaves are soaked in water for at least two hours, drained and crushed by hand; Khardwi and water are added and the mixture is boiled on medium flame while being stirred continuously with a traditional wooden blender; the thick paste obtained is Narzi.
Traditional Knowledge
The characteristic bitterness is moderated by boiling and the addition of Khardwi. Jute leaves give the dish its Omega-3 content and medicinal value, and the raw product can be preserved for many years.
